Fruity Italian Soda
2 cups roughly chopped rhubarb
2-4 cups strawberries, trimmed and roughly chopped
2 cups water
1 cup honey
2 Tablespoons fresh squeezed lemon juice
22 oz. Bottle of sparkling water
• Bring first three ingredients to a boil, then reduce
to a simmer for about fifteen minutes.
• Strain into a glass bowl (using a colander to strain rather than a fine mesh strainer allows bits of fruit to
slip through into the syrup).
• Add honey and stir until honey dissolves.
• Mix the bottle of sparkling water, lemon juice, and about a cup of the fruit syrup to taste.
